Meats

Beef Brisket
Smoked to perfection for an hour per pound over Oak – simply seasoned with salt and pepper and sliced to order. A fan favorite!!

Baby Back Ribs
From the loin – Baby Backs are the leaner pork rib. We season simply and let the smoking process be part of the overall seasoning. Our best-selling rib!

St. Louis Ribs
Pit master’s favorite rib... cut from the spare rib which comes from the belly. The St. Louis rib is typically meatier with a bigger bone and higher in fat (fat = flavor).

Pulled Pork
We smoke the pork butt until it falls apart, then we shred, chop and blend with our mustard vinegar sauce – the only meat we serve with sauce.

Tri Tip
We do tri tip differently by slow smoking it, producing a tender, nicely smoked piece of beef. Not your grandpa’s tri tip.....

Chicken
Salt brined then salted and smoked – Subtle yet delicious.
