Baby Back Ribs

St. Louis Ribs
Pit master’s favorite rib... cut from the spare rib which comes from the belly. The St. Louis rib is typically meatier with a bigger bone and higher in fat (fat = flavor).
We smoke the pork butt until it falls apart, then we shred, chop and blend with our mustard vinegar sauce – the only meat we serve with sauce.
We do tri tip differently by slow smoking it, producing a tender, nicely smoked piece of beef. Not your grandpa’s tri tip.....
